Honeybee Health: Skinny Red Potato Salad

Keeping up with my promise to make one item a week from my Pinterest TASTE board, I made this Skinny Red Potato salad. Most potato salads are loaded with fattening mayo. This one only calls for one table spoon! It was so much of a hit, I made it twice in one week! Its perfect  for all your Summer BBQ’s!!

Ingredients:
Red Potatoes 
Mayo
Olive Oil
Red Wine Vinegar
Dijon Mustard
Red Onion
Green Apple (I used celery instead)
Green Bell Pepper (didn’t have and it was fine without)
Scallions (also left these out because I didn’t have them but will definitely use them the next time I make it)

  1. Looks so delicious!! I am going to be trying this out this weekend – need to get red potatoes and scallions. I saw the recipe (via the link you provided) and had a good laugh when I saw that it was an adapted Paula Deen recipe! I think I need to join pinterest too…..
