What You’ll Need:
2 Bunches of Tuscan Kale (Ribs removed and leaves sliced to desired size)
1/2 cup Extra Virgin Olive Oil
1/4 cup lemon juice (I used Meyer Lemons to make it a little less tart)
3 cloves of mashed Garlic
1/2 cup finely grated Parmesan cheese (and some larger shavings for garnish)
1/2 tsp Sea Salt
A pinch of red pepper flakes
Directions:
Making this is super easy just whisk your olive oil, lemon juice, garlic, salt and red pepper flakes in a large bowl. Then add in your kale and toss until well coated. Let it sit at room temperature for about 15 to 20 mins.
Next add in your parmesan (and 2 Tbps of toasted whole wheat toasted bread crumbs if you like) and toss. Top with a few larger pieces of fresh parmesan and serve!
*Now I made this with the pre-bagged Organic Tuscan Kale from Trader Joe’s but next time I’ll make it with Organic bunches that I can remove the ribs. In the TJ’s bag the kale is cut but the ribs are still in it and it does makes a difference. Also I think I will make this recipe with half the oil next time and see how it turns out! Even though this recipe could serve about 4 people I know I could easily eat half in one sitting so I’m going to try it with a little less oil and see how it turns out.

I used your recipe but decreased the oil to 1/4 c, only one clove of garlic, and lots of red pepper flakes. It is delicious! Thanks for the idea!
I tried this recipe using a really flavorful olive oil and decreased the amount to 1/4 cup (or 4 tbsp) and it was fantastic!

Forgive my lack of knowledge, but what is considered the "rib" of the kale? The thick middle? I've always cooked my kale so it softens but would love to have it raw! Going to give it a try…

I made this last night and it was wonderful!
Definitely remove the kale ribs. I decreased the oil by half and added extra crushed red pepper.
Next time I will also decrease the lemon according.
