The hubby requested shepards pie for dinner earlier this week (typical manly dinner 😉 so the hunt began for a simple and healthy recipe. I couldn’t find one that I loved so I decided to make mine one up and have to say it was to tasty not to share with you ladies! I made mine with lean grass fed bison and topped it with cauliflower mashed potatoes! The potatoes were so tasty my husband didn’t even know they had cauliflower in them!! Here’s my recipe, hope you ladies enjoy it as much as we did!
Ingredients:
1 pound lean red meat (I used grass fed bison)
3 cloves of garlic (you can add more or less to your liking)
1 medium onion
2 Tbsp of olive oil
1 package of mixed veggies (I used Trader Joes organic veggie foursome)
1 Tbsp worsteshire sauce
3 sprigs of Thyme
salt and pepper to taste
(See ingredients needed for the cauliflower mashed potatoes below)
Directions:
Preheat your oven to 375 degrees. Heat two tablespoons of olive oil in a large skillet. Saute your garlic and onions until soft. Next add your meat and cook thoroughly and add salt and pepper. Now mix in your bag of mixed veggies,Tbsp of worstershire sauce and thyme. Once they are all mixed together place them in an 8×8 baking dish and top with your cauliflower mashed potatoes. Then pop it in the oven for about 20-25 minutes, until the peaks of your potatoes start to brown.
*For the Cauliflower Mashed Potatoes just bring your potatoes and cauliflower to a boil (separately as the cauliflower cooks much faster than the potatoes). Drain and toss them in a large bowl. Pour in a splash of skim milk (more or less depending on desired consistency), 2 Tbsp of Earths Balance buttery spread and about 1/4 cup of fresh parmesan cheese and mash away! Add salt and pepper to taste.

Hi megan I used three potatoes and half a bag of cauliflower (its was only the two of us so double that if you are making a it for a larger group)
Yay!!!! I LOOOOOVE cauliflower and I've been wanting to make mashers out of it, I keep seeing it on Pinterest. I didn't realize it was both veggie and potato though. What ratio did you use?

you can do just straight up mashed cauliflower which i personally love but I wasn't sure it would be a hit with the family so i i added some potato to ours so it wouldn't be such a drastic change.
Love that you found a healthier version…that's what I do with our family, too. Most of the time they have no idea! Will definitely try this one for dinner soon. Yum!

Have you tried making it with polenta? It's just as good! That's our go-to recipe when we're trying to avoid mashed potatoes.
